Texas Cheese Steak Sandwiches
Executive Chef Garth Blackburn for Sub Zero / Wolf

12 oz Beef Tenderloin
12 slices French or Italian Bread
½ lb Mild artisanal white cheese (such as Mozzarella Co.’s Caciotta), sliced
1 Sweet yellow onion (such as Texas 1015, Vidalia, Peruvian Sweet), sliced
3 Jalapeños , seeded & sliced
3 Sweet red bell peppers, roasted & peeled
¼ cup Mixed herbs (parsley, rosemary, oregano, etc), chopped
2 Tbsp Red wine vinegar
Extra virgin olive oil, for consistency & taste
Salt & pepper, to taste

Preheat Wolf grill on medium high.
Season beef with salt & pepper and grill to medium rare, 125°. Rest 10 minutes & slice 1/4” thick.
Caramelize onions & jalapeños with olive oil  in sauté pan on medium until golden, 15 - 20 minutes.
Using blender, pulse peppers, herbs, vinegar, and 3 Tbsp olive oil.  Season to taste.
Brush bread with olive oil, salt & pepper, grill one side until toasted, turn and top with one slice of cheese.

Assemble open-faced sandwiches by topping cheese bread with one slice of meat and 1 Tbsp caramelized onions. Drizzle with roasted pepper sauce.
