Cooking Simplified with SubZero Wolf's Chef Garth

Argentinean Cut Filet with Green Peppercorn-Wasabi Sauce
2-3 Lbs. Beef tenderloin, center cut section
½ tsp Butter
2 Leeks, washed and cut into half moons
3 Green peppercorns, ground
2 Tbsp Brandy
1 Tbsp Heavy whipping cream
1 Tbsp Champagne vinegar
3 Tbsp Chopped parsley
1 Tbsp Prepared wasabi paste

• Preheat Wolf charbroiler or Wolf griddle to 450°.
• Cut tenderloin into 5 to 8 steaks, then cut steaks Argentinean (jelly roll) style. Season with salt & pepper.
• Cook leeks in butter with green peppercorns until soft.
• Deglaze pan with brandy. Add heavy whipping cream, Champagne vinegar, wasabi paste and parsley. Heat through.
• Grill or griddle steaks about 3 minutes per side for medium-rare. Finish them in the oven for medium through jerky texture.
• Serve the sauce with the steaks.


Grilled Asparagus with Balsamic-Pomegranate Syrup

1 bunch Asparagus, 2-3 inches trimmed from bottom of stalks
Olive oil
Salt & Pepper
½ cup Balsamic vinegar
1 Vanilla bean, split in half
Seeds from ½ of a pomegranate

• Preheat Wolf charbroiler.
• Toss asparagus with olive oil, salt and pepper.
• Grill asparagus for 2-3 minutes, rolling one time, until charred and crisp-tender.
• Remove to a platter.
• Meanwhile, for the syrup, place balsamic vinegar, split vanilla bean and pomegranate seeds in a saucepan. Cook on Wolf burner on medium heat 8-12 minutes until it begins to thicken, being careful not to burn.
• Strain the syrup mixture and drizzle over the asparagus.


Chef Secrets by Garth

1. Unsure which sheet trays to buy? Restaurant supply stores sell half-sheet bun pans for about $8 that work great.

2. While you're there, go in with a friend to co-op 2,000 sheets of parchment for $60 and keep them in the bottom of a drawer. I use it for all my sheet trays to prevent sticking and ease clean-up.

3. Kitchen a little smoky? Next time turn your ventilation on 15 minutes before cooking. That will redirect the airflow in your kitchen toward your ventilation and capture much more of the grease and smoke that would have made it to your ceiling.
